    What is this bit

On the diversion from the main upper rad hose, in front of the airbox, other hose goes off towards the bottom of the rad across front of subframe. 2 wires going to a silver cylinder.

    What is it?

Sounds like the aux waterpump, kicks in when the engine is turned off and temps are over 105'C.

Not always. Sometimes it's just the pump (after fan turns off). It's quiet buzzing sound. You can feel vibrations when you touch water hoses. On most cars they are broken, so no wonder you didn't hear it.

You tend to get it on cars with broken wiring to the fan switch, as the fan doesn't kick in while it's running but as soon as you turn the engine off it takes a reading from a different sensor and fires into life.
