tyre size anyone?

just bought a williams and it needs a new tyre, possibly two. currently theyre all 195/55 r15's, but i understand some people put 195/50's on. Do people only do this when changing all tyres? or can it be a one-by-one process? would i notice anything by have one tyre slightly different size? They do seem alo cheaper..

It's 185/55/15s that come as standard, so definitely don't put 195/55/15s on there, if that is what they are
