Only reason I say time is an issue is that it doesn't look like I'm getting any hols this year, so will want some next year. BUT steph's sister is on about getting married in italy next summer and the kirmanator and I are mooting a Nordschleife visit as well.

Would I/we get a full refund if we said yes now but had to pull out?

Depending on the date arranged mike, and how much money is need to prebook the track, hotel and ferries - u might loose a little money but lets finalise a date first. and then you can confirm if you are avaliable or not.
