What other size brakes are available for renaults (bigger then williams), off the shelf which will fit under a 15" williams wheel.

The most common upgrade on here 172 / 182?

Is there anything else

Hyspec has a big brake conversion kit for Renault that fits under 15" rim. (285 mm disc + caliper + bracket)

A cheaper alternative is the Ktec 285mm kit utilising standard callipers.

I got my whole kit for £30 2nd hand. bargain if you can find one imo.

I have the ktec big brake conversion, seems good. In fact I had to make an emergency stop while chasing some noob in an mx5, was very impressed!

Bigger brakes don't stop you quicker, just give better heat dissipation to help prevent your fluid boiling. Stickier tyres stop you quicker.
