I've noticed that every so often regardless of time of driving that the brakes go soft but more than that you can sit as a set of traffic lights holding it on the brakes and the pedal just starts moving further and further away from you until you get to the point where you have to release the pedal and reapply the pressure...

Very annyoing as I don't trust them 100% and its affecting my driving now

Master cylinder usually.

As mentioned, You could either have air in the system or a leak somewhere.
Get them bled up and keep an eye for drops anywhere, inc the rear bias valve.

If it's not leaking it sounds like the master cylinder.

Go outside now and very very gently apply the brakes, if it goes to the floor, more certainly it's the master.

You shouldn't sit in traffic on the brakes it retains the heat in the pads and disks and can cause them to warp.

possibly leaking brake pipe...

Most probably air in the system. Mine had this. Busted rear hose meant it couldn't be bled properly. New hose, bleed and it doesn't happen now.

theres a way to test but dont think you can use brake clamps on braided hoses

mine did in hot weather in traffic before i put the heat shield on, the exhaust must have been boiling the fluid, quite scary. yours doesnt sound like that though

get some brake clamps and clamp off all four wheels. then try it again. if it still happens and there,s no leak at the master cylinder or brake hoses it is a faulty master cylinder. if the pedal is now fine release one brake clamp at a time till you find the faulty components
