Can anyone shed any light on this? Who makes it? What performance gains is it supposed to offer?

You can buy chips with different maps on them which you solder into the ECU after removing the old chip. This only really works on a standard engine with minor modifications such as decat pipe. Remap involves replacing the standard chip in the ECU with a blank chip and uploading files from other vehicles with similar modifications to yours. That chip is then altered after each run on the rolling road until maximum power is reached or as close to maximum power available by remap iirc
