car temp probs possibly

My engine temp sits at 3/4 high, and my oil temp sits and the bar above 100, now to me this is too high, i thought i put a low temp stat in because with the other one it it was runnin full about 10mins after start up!

the fan also kicks in quite frequently, ive had 2 valvers before and never heard the fan on either!

any ideas?

Has your coolant always been clean or did it look like sludge at one point?
If so, i would say get a decent coolant flush.
